Wolf Mountain Sanctuary

Maria and family recently visited Wolf Mountain Sanctuary.

It is a sanctuary for rescued wolves located in Palmdale, and is primarily dedicated to saving the threatened species while lending a helping hand to at-risk local youth. It is also one of the few wolf sanctuaries that hosts interactive wolf educational tours.

Everyone learned about the wolves, about their life in the wild and most importantly, why save the wolf?

A wolf is so noble, so beautiful.

The wolves, as well as other endangered species, are ecological indicators.  It is by studying these species and learning how to preserve them that we learn the main factors affecting our environment.

Visit the organization's website to learn more.

Yes, you get to actually touch a wolf and could most likely get kissed by a wolf … if you want to!!

Quick Balance Test

To evaluate your own balance...

  1. Stand up and imagine you're going to walk forward on a straight line, placing one foot directly in front of the other so that the heel of your front foot touches the toes of your back foot.

  2. Keep both feet flat on the floor.

  3. Hold that position and close your eyes.

If you can maintain your balance for 30 seconds, you are doing pretty well. Congrats!

If you are wobbling just about as soon as you close your eyes—or before—your balance is poor.

If you did not perform as well as you thought you should, it's OK.

Let’s work on this together!

Celebrating Spring Holiday Traditions

Season to celebrate Easter and Passover.

Both of these holidays bring an emphasis of nature, hope and history.

The renewal of nature that comes with spring amplifies the promise of redemption intertwined in the historical events being commemorated.

Passover commemorates events leading to the liberation of the children of Israel and is celebrated for seven to eight days.

Easter, a festival in the Christian calendar, celebrates the events leading to and the resurrection of Jesus and is celebrated over a week which is known as the 'Holy Week.'

We can always admire the varying Easter and Passover traditions that are held around the world and here in our community.

Whether you remember having ham or lamb, or as a kid you hunted eggs, had a chocolate bunny, or smashed dishes to indicate a fresh start during Passover, traditions are meaningful for how uniting and celebratory they are every spring.

Join us in celebrating the tradition of sharing meals with family & friends.

Enjoy  one of our favorite traditional recipes.

Roasted Asparagus with Lemon and Olive Oil

  • 1 1/2 Lbs. medium asparagus, peeled

  • 3 Tbsp. extra-virgin olive oil

  • Salt & fresh ground Pepper

  • 1 Tbsp. fresh lemon juice

  • 1 tsp. grated lemon zest

Preheat oven to 450.

In a baking dish lined with parchment paper, drizzle the asparagus with half of the olive oil and season with salt & pepper.

Roast for about 15-20 minutes, or until tender when pierced with a fork. When done, drizzle the asparagus with the remaining olive oil, lemon juice and zest. Serve hot.

Enjoy!

P/oP St. Patricks Day Recipe & Mat Class reminder

After your workout, enjoy making our P/oP Irish Soda Bread at home!

The thought of making homemade bread may send you running scared, but baking Irish soda bread is one of the quickest and easiest bread recipes you can make because it is a “quick bread.” This quick bread gets its rise from baking soda instead of using yeast as in other bread recipes. You can also enjoy it anytime not just during St. Patrick’s Day holiday. To make Irish Soda Bread you’ll need the following…

 IRISH SODA BREAD

Ingredients:

  • 1 and 3/4 cups buttermilk
  • 1 egg, preferably Large
  • 4 and 1/4 cups all-purpose flour (plus a bit more for your hands and work surface)
  • 3 Tbsp granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 and 1/2 Tablespoons unsalted butter, cold and cubed (don’t skimp on the butter)
  • 1 cup raisins, golden and/or regular (instead of raisins, try 1 cup of nuts or dried cranberries/dried blueberries/currants.)

1.     Preheat oven to 425°F. Lightly grease a 8-10 inch cast iron skillet or cake pan with butter or nonstick spray.

2.     Whisk the buttermilk and egg together in a small bowl. Set aside.

3.     Whisk the flour, granulated sugar, baking soda, and salt together in a large bowl.

4.     Cut in the butter using a pastry blender, two forks/knives, or your fingers.

Work the dough until into coarse crumbs, then fold in the raisins with a rubber spatula or wooden spoon.

5.     Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Gently fold the dough together until dough is too stiff to stir. With floured hands, work the dough into a ball. Turn the dough ball out onto a floured work surface and knead the dough for about 30 seconds or until all the flour is moistened. Dough should be slightly sticky, but if it is too sticky add a little more flour as needed. Best to not over knead.

6.     Transfer the dough to the prepared skillet/pan. Using a lightly buttered serrated knife, score an + on the top of loaf.

7.     Bake until the bread is golden brown and center appears cooked through, about 45 minutes. Loosely cover the bread with aluminum foil halfway through baking if there is heavy browning on top.

8.     Remove skillet/pan from the oven and allow bread to cool for 10 minutes before transferring it to a wire rack. Serve warm or at room temperature.

Enjoy!
